(Norsk versjon: Verdens beste potetsalat)

I absolutely love to grill, and I make my own marinades and sides. Now that BBQ season has long since commenced, I think a BBQ-series on my blog will do just nicely.  This week it is potato salad time! This potato salad is great both served luke warm, or cold, and naturally goes perfectly with grilled foods.

You need:

  • 1 kilo potatoes
  • 1 large onion, chopped
  • 1 Chinese garlic, minced
  • 1 glass pickles, chopped (save the brine!)
  • 1 small glass of capers, drained
  • 150 grams mayonnaise
  • 300 grams sour cream or crème fraiche
  • Salt and pepper to taste
  • Fresh herbs, if you have it (dill, parsley, lemon balm, coriander, oregano, basil etc.)

Cook the potatoes whole, leave the skin on.

As the potatoes boil, mix mayonnaise, garlic, sour cream/crème fraiche, onion, capers and coarsely chopped gherkins.

Chop the cooked, warm potatoes and pour the brine from the gherkins/pickles over for it to soak into the potatoes. Mix everything together and season with salt and pepper and the fresh herbs.

The warm potatoes make the whole salad go lukewarm, and it can be served straight away. Or you can refrigerate it before serving if you prefer.

  1. I love potato salad and can’t wait to try your recipe. When I would help my maternal grandmother make her potato salad she always used the brine from the pickles and she never measured anything. She always did it by taste. Thank you for sharing and I look forward to trying it!!!

  2. I think I’ve made something like this before. It is good, but around here, people aren’t big on warm potato salad and they definitely aren’t big on capers. ^_^ I like it, but I can’t eat it by myself. ^_^

      1. As much as I would love to hop the pond and go over there — I even have a passport! — that would require flying… I have a morbid fear of flying. >_< Someday. Someday.

      2. Ah. I really hope you get over the fear of flying! Hubby is almost over it now, it has taken some years and a course. What really helped him was to get a headset with noice cancelling, but it’s still far from his favorite thing to do…

Actually, it’s only about 5 years ago that I started making everything from scratch – because with no plan and sporadic shopping I ended up throwing lots of food away – and we ate alot of crap. So I started going through my cookbooks and planned my weeks accordingly – and then started shopping once a week. The amount of time saved at the store when you know what you need to get, the money saved and the fact that we now had time to cook from scratch – made it an easy transition into a healthier lifestyle. Granted – I don’t go for sugarfree or fatfree – not at all – but it is still healthier then the crappy stuff you get out of a box. And way tastier 🙂

  3. Well no, we don’t have to be crazy and still enjoy what we enjoy…or else what is the point. I eat things I enjoy but know what it is, cooking from scratch. no processed stuffs etc. But the occasional custard tart and Kitkat. The rest is wholefoods nuts seeds etc and lots of fruit n veg, lean meat. I am only wee but gained weight now I am aware of what I eat which I enjoy and not gambling especially on take away, even though rare, and as you say, Supermarket crap.

  4. Hey! That potato salad looks very nice. potato salad is a serious subject here in South Carolina, right along with barbecue. Have to give yours a spin and see what’s happening. Great post on superpowers; my useless superpower might be identifying roadkill without stopping. Gross!
